Acai Bowls

Ingredients

  • 1/2 cup pure juice or coconut water
  • 1 cup fresh sliced strawberries, plus additional for topping
  • 3/4 cup fresh chopped mango, plus additional for topping
  • 1 medium-sized banana, sliced and divided
  • 2 cups ice
  • 1 teaspoon acai powder
  • 1 1/2 tablespoon honey
  • 2 tablespoons granola, for topping
  • 2 teaspoons shredded coconut, for topping

Directions

  1. Add the coconut water, strawberries, mango, half of the banana, ice, acai powder and honey to a blender and mix well for about 2 minutes.
  2. Divide equally into 2 bowls and top with the additional sliced strawberries, sliced mango, remaining sliced banana, granola and shredded coconut.
  3. Serve.
