Aunt Melba's Squash Casserole

Ingredients

  • 4-6 yellow squash, sliced
  • 1/3 cup unsalted butter
  • 1/3 cup chopped onion
  • 1 (10.75-ounce) can cream of mushroom soup
  • 1/2 cup shredded sharp cheddar cheese
  • 1 cup corn chips

Directions

  1. Preheat oven to 350 F. 
  2. In a skillet over medium heat, cook squash with a little water for 10-15 minutes or until tender. Drain and remove. 
  3. In the same skillet, melt butter and add onions. Sauté onions until tender. 
  4. Combine all ingredients, except corn chips, into a 9 x 13-inch casserole pan.
  5. Sprinkle the corn chips on top and bake for 15-20 minutes.
