Ingredients
- 1 medium (12-14 pounds) turkey
- 1 carrot (chopped)
- 1 celery stalk (chopped)
- 1 medium onion (cut in quarters)
- 4-5 parsley sprigs (chopped)
- 2 tablespoons freshly ground coffee
- 1 tablespoon kosher salt
- 1/2 tablespoon ground black pepper
- Some oil to moisten
Directions
- Fill cavity with carrots, celery, parsley and onions.
- Mix coffee, salt and pepper, and rub onto the turkey.
- Brush with oil and roast at 350°F oven for 2-3 hours.
- Remove and rest for 20 minutes. Carve.
