Easy Cranberry Bread with a Cranberry Spread

Ingredients

Easy Cranberry Bread

  • 1 1/2 cups flour
  • 3/4 cup light brown sugar
  • 1 1/2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon cinnamon
  • 1/2 teaspoon nutmeg
  • 1 cup halved fresh cranberries
  • 1/2 cup chopped pecans or walnuts
  • 1 tablespoon grated orange peel
  • 2 eggs
  • 1 teaspoon vanilla extract
  • 3/4 cup milk
  • 3 tablespoon melted butter

Cranberry Spread

  • 1 8-ounce package cream cheese
  • 1/4 cup whole cranberry sauce
  • 1/2 cup chopped pecans
  • 1/2 orange, zested and juiced

Directions

  1. Grease an 8 1/2" x 4 1/2" loaf pan or spray with non-stick cooking spray.
  2. Preheat oven to 350°F.
  3. Combine flour, brown sugar, baking powder, baking soda, cinnamon and nutmeg in a large bowl. Stir in cranberries, nuts and orange peel.
  4. Mix eggs, milk, melted butter and vanilla in a small bowl. Stir into flour mixture just until combined. Spoon into pan.
  5. Bake 55-60 minutes. Cool 15 minutes on wire rack. Remove from pan. Store tightly wrapped in plastic wrap at room temperature.
  6. For the Cranberry Spread: Beat cream cheese with electric mixer until fluffy. Stir in cranberry sauce, pecans, orange zest and juice. Keep refrigerated.
