Easy Tomato Salad

Ingredients

  • 2 pounds medium-size tomatoes, large dice (about 6 cups)
  • 8-10 fresh basil leaves, torn
  • 3/4 cup thinly sliced red onions
  • 1/2 cup capers, drained
  • 1/2 teaspoon garlic powder
  • 1/4 cup extra-virgin olive oil
  • 1 lemon, juiced (about 1/4 cup)
  • 3/4 teaspoon fine sea salt
  • 3/4 teaspoon black pepper
  • 1/2 cup feta cheese (optional)
  • Small baguette (optional), for dipping

Directions

  1. In a large bowl, gently mix together the tomatoes, basil, red onion, capers and garlic powder.
  2. Drizzle the olive oil and lemon juice over the tomato mixture and sprinkle the sea salt and pepper over the mixture.
  3. Lightly toss to coat and taste, add more salt, pepper or garlic powder if needed. Add the feta cheese and mix gently.
  4. Let the salad sit for 30 minutes for the flavors to blend.
  5. Serve or refrigerate for up to 2 days. Serve with a baguette for dipping.
