Elote Salad

Ingredients

For the dressing:

  • 1/2 cup Greek nonfat yogurt
  • 1 tablespoon lime juice
  • 1 tablespoon honey
  • 1 teaspoon paprika
  • 1 teaspoon cumin
  • Pinch of cayenne, optional

For the salad:

  • 1 tablespoon olive oil
  • 2 cups fresh corn kernels, cut off the cob
  • 1 garlic clove, minced
  • 2 tablespoons lime juice
  • 2 teaspoons lime zest
  • 1/2 cup black beans, drained and rinsed
  • 1/2 red pepper, diced
  • 1/2 red onion, diced
  • 1/2 green pepper, diced
  • 1/4 cup chopped cilantro
  • 1/4 cup cotija cheese, crumbled

Directions

  1. Combine ingredients for dressing in a large bowl and whisk until blended.
  2. In a large sauce pan over medium heat, sauté corn in oil.  When it is beginning to brown or char, add the garlic then lime juice.
  3. Take off heat and add remaining salad ingredients. Add everything to the dressing bowl and mix together, coating everything.
