Ingredients
For the guava puree:
- 4 fresh guavas
For the simple syrup:
- 1/2 cup white sugar
- 1/2 cup water
For each daiquiri:
- Ice cubes
- 2 ounces guava puree
- 2 ounces rum (light or golden)
- 1.5 ounces fresh lime juice
- 1.5 ounces simple syrup
- 1 lime, cut into full-moon slices for decoration
Directions
- To make the guava puree, wash the guava fruit then trim off the ends and any brown spots.
- Cut each fruit in half and then quarter each half. Put the fruit into a blender or food processor and process on low speed for approximately 30 seconds or until the fruit is completely blended. Add water if the puree is too thick.
- Press the blended guava through a fine-mesh strainer over a bowl to remove any seeds or lumps. Reserve guava puree in bowl.
- To make the simple syrup, in a sauce pan add 1/2 cup of white sugar to 1/2 cup of water and stir. Place over medium heat and stir until the liquid is completely clear. Remove from heat and allow to cool.
- In a shaker filled with ice cubes, add the guava puree, rum, lime juice and simple syrup.
- Shake vigorously and pour into a chilled martini glass.
- Decorate with lime slice and serve immediately.
