Guava Daiquiri

Ingredients

For the guava puree:

  • 4 fresh guavas

For the simple syrup:

  • 1/2 cup white sugar
  • 1/2 cup water

For each daiquiri:

  • Ice cubes
  • 2 ounces guava puree
  • 2 ounces rum (light or golden)
  • 1.5 ounces fresh lime juice
  • 1.5 ounces simple syrup
  • 1 lime, cut into full-moon slices for decoration

Directions

  1. To make the guava puree, wash the guava fruit then trim off the ends and any brown spots.
  2. Cut each fruit in half and then quarter each half. Put the fruit into a blender or food processor and process on low speed for approximately 30 seconds or until the fruit is completely blended. Add water if the puree is too thick.
  3. Press the blended guava through a fine-mesh strainer over a bowl to remove any seeds or lumps. Reserve guava puree in bowl.
  4. To make the simple syrup, in a sauce pan add 1/2 cup of white sugar to 1/2 cup of water and stir. Place over medium heat and stir until the liquid is completely clear. Remove from heat and allow to cool.  
  5. In a shaker filled with ice cubes, add the guava puree, rum, lime juice and simple syrup.
  6. Shake vigorously and pour into a chilled martini glass.
  7. Decorate with lime slice and serve immediately.
