Homemade Noodles for Soup

Ingredients

  • 2 cups flour
  • 2 teaspoons salt
  • 3 large egg yolks
  • 1 large egg
  • 1/4 – 1/2 cup water

Directions

  1. Mix flour and salt together on a clean, flat surface. Make a well in the mix and add the egg yolks and egg.
  2. Mix with your hands. Add water a teaspoon at a time until you can knead the dough. Knead the dough until smooth and elastic, about 10 minutes. If dough is sticky, add more flour, a little at a time.
  3. Divide dough into 4 equal parts. On lightly floured surface, roll one-fourth of dough at a time into rectangle, 1/16 to 1/8 inch thick (keep remaining dough covered and cut using one of the methods above). Cut dough into noodle strips using one of the methods above.
  4. Arrange in single layer on lightly floured towels; let stand 30 minutes or until dry.
  5. Homemade noodles can be stored in an airtight container in the refrigerator for up to 3 days.
  6. To freeze, place noodles in a plastic freezer bag or freezer container. Seal and freeze up to 8 months. Add 1 – 2 minutes to cooking time for frozen noodles.
