Ingredients
- 2 cups flour
- 2 teaspoons salt
- 3 large egg yolks
- 1 large egg
- 1/4 – 1/2 cup water
Directions
- Mix flour and salt together on a clean, flat surface. Make a well in the mix and add the egg yolks and egg.
- Mix with your hands. Add water a teaspoon at a time until you can knead the dough. Knead the dough until smooth and elastic, about 10 minutes. If dough is sticky, add more flour, a little at a time.
- Divide dough into 4 equal parts. On lightly floured surface, roll one-fourth of dough at a time into rectangle, 1/16 to 1/8 inch thick (keep remaining dough covered and cut using one of the methods above). Cut dough into noodle strips using one of the methods above.
- Arrange in single layer on lightly floured towels; let stand 30 minutes or until dry.
- Homemade noodles can be stored in an airtight container in the refrigerator for up to 3 days.
- To freeze, place noodles in a plastic freezer bag or freezer container. Seal and freeze up to 8 months. Add 1 – 2 minutes to cooking time for frozen noodles.
