Ingredients
- 1 cup water
- 1 1/2 pounds red potatoes, unpeeled and cut into 2-inch chunks
- 4 tablespoons unsalted butter
- 1/2 cup half-and-half, plus more if needed
- 1/4 teaspoon salt
- 3 tablespoons chopped chives
Directions
- Pour water into the bowl of the Instant Pot.
- Add the trivet that came with the Instant Pot.
- Place potatoes in a steamer basket and put it over the trivet.
- Secure top and set on high. Cook for 7 minutes.
- Allow it to release pressure for 8-10 minutes then release remaining pressure.
- Meanwhile in a small saucepan combine the butter with half-and-half. Heat over low heat until butter is melted and mixture is warm.
- Transfer steamed potatoes to a large mixing bowl and mash. Pour in the butter mixture and add salt to taste.
- Add more half-and-half to reach desired texture. Stir in chives.
