Momma's Easter Green and White Salad

Ingredients

For the dressing:

  • 1/2 cup mayonnaise
  • 2 tablespoons sugar or 3-4 packs of equal® sweetener
  • 1/8 cup white balsamic vinegar
  • 1 teaspoon dry mustard
  • Salt and black pepper, to taste

For the salad:

  • 1 head of cauliflower, chopped into bite-sized pieces
  • 1 head of broccoli, chopped into bite-sized pieces
  • 1 green bell pepper, chopped
  • 1 (8-ounce) can of water chestnuts, drained and sliced
  • 1 small yellow onion, chopped, optional

Directions

  1. In a medium bowl mix all the dressing ingredients together. 
  2. In a large bowl mix the cauliflower, broccoli, bell pepper and water chestnuts. 
  3. Pour the dressing over the salad and mix well. 
  4. Cover the bowl and place in the refrigerator for 4 hours or overnight is best. 
  5. If adding the chopped onion, add it right before serving and mix into the salad.
  6. This dish is best served chilled.
