Ingredients
- 2 medium-ripe bananas
- 2 cups old fashioned rolled oats
- 1 tablespoon chia seeds
- 1/2 teaspoon cinnamon
- 1 cup milk of choice
- 2 cups mixed berries - strawberries, blueberries, blackberries and raspberries
- 2 tablespoons unsweetened shredded coconut
- 1/2 cup toasted walnuts, chopped
- <div><strong>Optional toppings:</strong> drizzle of maple syrup, drizzle of nut butter, whipped cream cheese</div>
Directions
- Heat oven to 350 F and spray an 8-by-8-inch baking dish with cooking spray.
- Mash bananas in the baking dish.
- Add oats, chia seeds and cinnamon.
- Add milk and stir to combine.
- Top with chopped berries, shredded coconut and toasted walnuts.
- Bake for 25 to 30 minutes until brown.
- Remove from oven and let cool for a few minutes.
- Serve with optional toppings.
