One Dish Baked Fruity Oatmeal

Ingredients

  • 2 medium-ripe bananas
  • 2 cups old fashioned rolled oats
  • 1 tablespoon chia seeds
  • 1/2 teaspoon cinnamon
  • 1 cup milk of choice
  • 2 cups mixed berries - strawberries, blueberries, blackberries and raspberries
  • 2 tablespoons unsweetened shredded coconut
  • 1/2 cup toasted walnuts, chopped
  • <div><strong>Optional toppings:</strong> drizzle of maple syrup, drizzle of nut butter, whipped cream cheese</div>

Directions

  1. Heat oven to 350 F and spray an 8-by-8-inch baking dish with cooking spray.
  2. Mash bananas in the baking dish.
  3. Add oats, chia seeds and cinnamon.
  4. Add milk and stir to combine.
  5. Top with chopped berries, shredded coconut and toasted walnuts.
  6. Bake for 25 to 30 minutes until brown.
  7. Remove from oven and let cool for a few minutes.
  8. Serve with optional toppings.
