Pomegranate, Black Bean and Avocado Salsa

Ingredients

  • 2 cups pomegranate arils (seeds)
  • 1 (15-ounce) can black beans, rinsed and drained
  • 1 small green pepper, chopped
  • 1/4 cup chopped red onion
  • 1/8 cup chopped cilantro
  • 1 large avocado, chopped
  • 2 tablespoons fresh lime juice
  • Salt and freshly ground black pepper, to taste
  • Pita chips, for serving

Directions

  1. In a large bowl, combine the pomegranate arils, black beans, green pepper, red onion, cilantro, avocado, lime juice, salt and pepper. Mix together gently. Place in a serving bowl and serve with pita chips. Best served on the day it is made.
