Ingredients
- 2 cups pomegranate arils (seeds)
- 1 (15-ounce) can black beans, rinsed and drained
- 1 small green pepper, chopped
- 1/4 cup chopped red onion
- 1/8 cup chopped cilantro
- 1 large avocado, chopped
- 2 tablespoons fresh lime juice
- Salt and freshly ground black pepper, to taste
- Pita chips, for serving
Directions
- In a large bowl, combine the pomegranate arils, black beans, green pepper, red onion, cilantro, avocado, lime juice, salt and pepper. Mix together gently. Place in a serving bowl and serve with pita chips. Best served on the day it is made.
