Spiced Steak Tips With Couscous and Swiss Chard

Ingredients

  • 2 teaspoons ground coriander
  • 1 teaspoon kosher salt
  • 1 1/2 teaspoons ground cinnamon
  • 1/2 teaspoon ground pepper
  • 2 pounds sirloin steak tips, trimmed and cut into 1-inch pieces
  • 1 tablespoon olive oil
  • 1 1/4 cups water
  • 2 tablespoons fresh lemon juice
  • 1 (15-ounce) can chickpeas, drained and rinsed
  • 3/4 cup couscous
  • 1/2 cup dried apricots, sliced
  • 2 cups Swish chard, chopped

Directions

  1. Combine coriander, kosher salt, cinnamon and pepper in a small bowl.
  2. With a paper towel, pat the steak tips dry and then sprinkle with 1 tablespoon of the spice mixture, ensuring that all of the steak is seasoned.
  3. In a large skillet over medium-high heat, add the olive oil. Add the steak tips and cook until browned on all sides.
  4. Remove the steak tips from the skillet onto a plate that can be covered with foil. Set aside.
  5. In the same skillet, mix the water, lemon juice, chickpeas, couscous, apricots and remaining spice mixture.
  6. Over medium-high heat, bring the mixture to a boil. Remove from the heat and cover the skillet, allowing the couscous to cook until tender, approximately 5-7 minutes.
  7. Fold in the Swiss chard and mix thoroughly (the chard should wilt).
  8. Plate the couscous mixture and top with the spiced steak tips.
