Sweet Potato, Apple and Celery Waldorf Salad

Ingredients

  • 2 tablespoons lemon juice
  • 2 tablespoons apple cider vinegar
  • 1 tablespoon P.S. Flavor!™ Citrus Spice seasoning or zest of one lemon
  • 1/2 teaspoon P.S. Flavor!™ Creole Kitchen seasoning or Creole seasoning of choice
  • 1/2 teaspoon P.S. Flavor!™ Mai Chai seasoning or cinnamon
  • 2 tablespoons extra-virgin olive oil
  • 1 tablespoon mayonnaise
  • 1 small sweet potato, peeled and julienned into thin matchsticks (about 1 cup)
  • 1 Honeycrisp apple, julienned into thin matchsticks (about 1 cup)
  • 1 stalk celery, julienned into thin matchsticks (about 1 cup)
  • 1 cup shredded kale, massaged
  • 2 scallions, thinly sliced on long bias
  • 1/4 cup pecans, toasted
  • 1/4 cup crumbled feta
  • 1/4 cup packed fresh cilantro leaves

Directions

  1. In a small bowl, whisk together lemon juice, apple cider vinegar and spices.  Whisk in olive oil and mayonnaise until smooth.
  2. In another bowl, combine sweet potato, apple, celery, kale, scallions, pecans, feta and cilantro.
  3. Drizzle dressing over salad, toss and season to taste with additional Creole Kitchen or kosher salt and pepper.
