Ingredients
For the salad:
- 1 14-ounce bag of cheese tortellini
- 1 14-ounce bag of tri-color cheese tortellini
- 1/4 cup banana peppers
- 1/4 cup pickled onions
- 1/4 cup roasted peppers
- 1/2 cup pimento-stuffed olives
- 8 ounces provolone cheese, diced
- 2 thick slices of hot Soppressata, diced
- 2 thick pieces of sweet Soppressata, diced
- 1/2 inch thick cut of deli ham, diced
- Salt and pepper, to taste
For the dressing:
- 1/4 cup extra-virgin olive oil
- 1/4 cup red wine vinegar
- Fresh oregano, to taste
- Salt and pepper, to taste
Directions
- In a large pot over high heat, bring water to a boil and add the tortellini. Cook according to package instructions, drain and let tortellini cool in refrigerator until chilled.
- Make your dressing by combining all ingredients into a separate bowl and whisk.
- In a large bowl, add the cooked and chilled tortellini.
- Top the tortellini with a little bit of the dressing to loosen.
- Add the rest of your ingredients, mix and enjoy!
