Vegetable and Hummus Wrap

Ingredients

  • 2 teaspoons olive oil
  • 2 teaspoons red wine vinegar
  • Salt and pepper to taste
  • 1 cup diced cucumbers
  • 1 cup diced red onion
  • 1 cup chopped black olives
  • 1 cup chopped tomatoes (we used cherry tomatoes)
  • 1 cup crumbled feta
  • 4 10-inch whole wheat wraps
  • Prepared classic hummus

Directions

  1. Mix the oil and vinegar and salt and pepper in a small bowl.
  2. In a medium bowl, toss cucumbers, onions, olives and tomatoes together. Add dressing and mix. Add the feta and toss lightly.
  3. Spread the wraps with hummus, add the vegetable mixture and fold. Cut in half diagonally to serve.
