Ingredients
- 2 teaspoons olive oil
- 2 teaspoons red wine vinegar
- Salt and pepper to taste
- 1 cup diced cucumbers
- 1 cup diced red onion
- 1 cup chopped black olives
- 1 cup chopped tomatoes (we used cherry tomatoes)
- 1 cup crumbled feta
- 4 10-inch whole wheat wraps
- Prepared classic hummus
Directions
- Mix the oil and vinegar and salt and pepper in a small bowl.
- In a medium bowl, toss cucumbers, onions, olives and tomatoes together. Add dressing and mix. Add the feta and toss lightly.
- Spread the wraps with hummus, add the vegetable mixture and fold. Cut in half diagonally to serve.
