Ingredients
- 2 cans chickpeas, rinsed and drained
- 1 medium red onion, diced
- 1 red bell pepper, diced
- 2 cloves garlic, minced
- 1/3 cup sliced Kalamata olives
- 3 tablespoons fresh lemon juice
- 4 tablespoons extra-virgin olive oil
- Minced fresh basil, to taste
- Crumbled feta cheese, to taste
- Salt and pepper, to taste
Directions
- In a large bowl combine chickpeas, onion, pepper, garlic, and olives. Add lemon juice, olive oil, basil, cheese, salt and pepper and toss until well incorporated. This is a great recipe to add your own touches. Add cucumber, artichoke hearts, roma tomatoes or roasted red pepper (instead of raw red pepper). Play around with other seasonings like parsley or lemon grass.
