Ingredients
For the pickled red onions:
- 1 cup red wine vinegar
- 1/2 cup water
- 2 tablespoons Sugar in the Raw®
- 2 tablespoons kosher salt (recommended: Diamond Crystal®)
- 4 cups slivered red onion
For the salmon:
- 4 cedar planks, soaked in water
- Olive oil, for planks
- 1 tablespoon sherry or malt vinegar
- 1 tablespoon Dijon mustard
- 1 tablespoon pure maple syrup
- 4 (5-ounce) fresh salmon fillets
- 1 teaspoon P.S. Flavor!™ Creole Kitchen seasoning or Creole seasoning of choice
- 2 tablespoons everything bagel seasoning
- Pickled Red Onions, garnish, recipe follows
- One lemon, cut into 4 slices
- Flat-leaf parsley sprigs, garnish
Directions
Make the pickled red onions:
- Measure vinegar, water, sugar and salt into a pot and bring to simmer.
- Place sliced red onion in a glass bowl and pour hot liquid over them; submerge with plate on top of onions.
- Allow to cool in liquid for at least 1 hour and then transfer to a container.
Make the salmon:
- Preheat oven to 400 F.
- Remove cedar planks from soaking water; pat dry. Rub planks with olive oil. Place on sheet pan.
- Mix vinegar, mustard and maple syrup. Place salmon fillets in a glass bowl and top with mustard mixture to gently coat. Lightly sprinkle fillets with Creole seasoning and rub top of each with everything bagel seasoning; gently patting about 1/2 tablespoon per fillet. Place each piece on cedar planks.
- Roast salmon until cooked through, about 7-9 minutes, depending on thickness of fillets. Remove from oven.
- Garnish with Pickled Red Onions, lemon slice and bunch of parsley sprigs.
