Cedar Plank Roasted Everything Bagel Salmon and Pickled Red Onions

I love everything bagel seasoning, but rather than having it on the occasional bagel, I have started to use it as a savory crust on many dishes. I particularly find it marries well with salmon. Using everything bagel seasoning in this Cedar Plank Roasted Everything Bagel Salmon and Pickled Red Onions recipe really brings the flavor and texture up a notch and is sure to delight salmon lovers and skeptics alike.

Cedar Plank Roasting

When roasting salmon on a cedar plank make sure to remove the skin so that the fish can absorb the earthy, smoky flavor of the wood. The salmon will also get flavor from some tangy, slightly sweet and savory seasonings.

Soak the cedar planks for at least one hour and then pat them dry. Rub them with olive oil and place them on a sheet pan.

Gently coat the salmon with a mixture of vinegar, mustard and maple syrup and then sprinkle the fillets with my P.S. Flavor!™ Creole Kitchen seasoning and everything bagel seasoning. Place the salmon on the cedar planks and cook for seven to nine minutes, depending on the thickness of the fillets.

The Pickled Onions

I included a quick recipe for pickled onions to add a little something extra special to the salmon.

To make them, trim off the top of a red onion and then cut it in half from root to stem. Remove the skin and lay the halves down and thinly slice into half-moons with a 7-5/8″ Petite Chef knife.

Place red wine vinegar, water, Sugar in the Raw® and kosher salt into a pan and bring to a simmer. Place the onions into a large glass bowl and pour the hot liquid over the top. Submerge the onion slices by placing a plate over them and let them sit for at least an hour.

Pickling the red onion transforms it into something sweet and sour, and the acidity gives brightness and contrast of color when served with the salmon.

Serving the Salmon

Top each fillet with some of the prepared onions, a lemon wedge and some sprigs of fresh parsley for a stunning presentation.

Cedar Plank Roasted Everything Bagel Salmon and Pickled Red Onions

Ingredients

For the pickled red onions:

  • 1 cup red wine vinegar
  • 1/2 cup water
  • 2 tablespoons Sugar in the Raw®
  • 2 tablespoons kosher salt (recommended: Diamond Crystal®)
  • 4 cups slivered red onion

For the salmon:

  • 4 cedar planks, soaked in water
  • Olive oil, for planks
  • 1 tablespoon sherry or malt vinegar
  • 1 tablespoon Dijon mustard
  • 1 tablespoon pure maple syrup
  • 4 (5-ounce) fresh salmon fillets
  • 1 teaspoon P.S. Flavor!™ Creole Kitchen seasoning or Creole seasoning of choice
  • 2 tablespoons everything bagel seasoning
  • Pickled Red Onions, garnish, recipe follows
  • One lemon, cut into 4 slices
  • Flat-leaf parsley sprigs, garnish

Directions

Make the pickled red onions:

  1. Measure vinegar, water, sugar and salt into a pot and bring to simmer.
  2. Place sliced red onion in a glass bowl and pour hot liquid over them; submerge with plate on top of onions.
  3. Allow to cool in liquid for at least 1 hour and then transfer to a container.

Make the salmon:

  1. Preheat oven to 400 F.
  2. Remove cedar planks from soaking water; pat dry. Rub planks with olive oil. Place on sheet pan.
  3. Mix vinegar, mustard and maple syrup. Place salmon fillets in a glass bowl and top with mustard mixture to gently coat. Lightly sprinkle fillets with Creole seasoning and rub top of each with everything bagel seasoning; gently patting about 1/2 tablespoon per fillet. Place each piece on cedar planks.
  4. Roast salmon until cooked through, about 7-9 minutes, depending on thickness of fillets. Remove from oven.
  5. Garnish with Pickled Red Onions, lemon slice and bunch of parsley sprigs.
