Ingredients
- 1 seedless red or yellow watermelon (about 3-4 pounds)
- 1/4 cup olive oil (to use for grilling)
- Juice of 3 oranges
- Juice of 4 limes
- 1/2 teaspoon kosher salt (or to taste)
- 2 drops of hot sauce
- 1 cup mayonnaise
- 2 tablespoons chopped fresh mint leaves
- Pepper to taste
- 1/2 cup feta or hard goat cheese, crumbled
- Orange liqueur, optional
Directions
- Cut watermelon in half lengthwise, then in half again into quarters.
- Cut the quartered watermelon into 2-inch thick slices; season with salt and brush lightly with olive oil. Set aside to marinate.
- Combine orange juice and lime juice in a bowl, then taste. If too tart add some more orange juice, season with 1/2 teaspoon salt and hot sauce.
- Slowly whisk in mayonnaise and chopped mint and season as desired with salt and pepper. Let rest for one hour.
- Heat grill or sauté pan to medium heat. Oil the grill (prior to heating) or sauté pan and cook melon 2 to 3 minutes on each side. Place on a platter and drizzle with citrus dressing. Garnish with cheese. Drizzle with orange liqueur.
- Serve with a slice of toasted French baguette, if desired.
