Grilled Watermelon With Citrus Sauce

Watermelon is being used in many new ways today including as a main ingredient in grilled or sautéed dishes. At this year's Epcot International Food and Wine Festival, Certified Master Chef Fritz Sonnenschmidt presented this Grilled Watermelon with Citrus Sauce recipe on Cutco's behalf.

The use of citrus and hot sauce with the watermelon offers a nice balance of sweet and savory. It's a surprising use of a fruit normally seen as a dessert or picnic side dish.

Grilled Watermelon with Citrus Sauce

Ingredients

  • 1 seedless red or yellow watermelon (about 3-4 pounds)
  • 1/4 cup olive oil (to use for grilling)
  • Juice of 3 oranges
  • Juice of 4 limes
  • 1/2 teaspoon kosher salt (or to taste)
  • 2 drops of hot sauce
  • 1 cup mayonnaise
  • 2 tablespoons chopped fresh mint leaves
  • Pepper to taste
  • 1/2 cup feta or hard goat cheese, crumbled
  • Orange liqueur, optional

Directions

  1. Cut watermelon in half lengthwise, then in half again into quarters.
  2. Cut the quartered watermelon into 2-inch thick slices; season with salt and brush lightly with olive oil. Set aside to marinate.
  3. Combine orange juice and lime juice in a bowl, then taste. If too tart add some more orange juice, season with 1/2 teaspoon salt and hot sauce.
  4. Slowly whisk in mayonnaise and chopped mint and season as desired with salt and pepper. Let rest for one hour.
  5. Heat grill or sauté pan to medium heat. Oil the grill (prior to heating) or sauté pan and cook melon 2 to 3 minutes on each side. Place on a platter and drizzle with citrus dressing. Garnish with cheese. Drizzle with orange liqueur.
  6. Serve with a slice of toasted French baguette, if desired.
