Ingredients
For the flatbread:
- 2 tablespoons olive oil
- 1 small red onion, thinly sliced
- 1 medium-sized pear, thinly sliced
- 2 naan flatbread
- 2/3 cup F.R.O.G. Jam (fig, raspberry, orange and ginger jam)
- 1/2 cup crumbled gorgonzola
- Arugula, for topping
- Balsamic glaze, optional for topping
For homemade balsamic glaze (or store bought):
- 1 cup balsamic vinegar
- 1/4 cup brown sugar
Directions
- Preheat oven to 400 F.
- Heat a medium sauté pan over medium heat and add oil to pan once hot. Add thinly sliced onions, stirring frequently until translucent and fragrant. Add thinly sliced pears to the skillet to soften just slightly – about 2 minutes.
- Place naan on parchment-lined baking sheet and put in oven for 3-4 minutes, just until warm. Stir the F.R.O.G. jam so it’s not clumpy. Spread F.R.O.G. jam on warm naan.
- Place onions and pear slices on flatbread. Add crumbled gorgonzola.
- For the balsamic glaze: Whisk together vinegar and sugar in a small saucepan. Heat over low heat and bring to a simmer and let cook until reduced by half. Stir occasionally.
- Bake flatbread at 400 F for 10 minutes. Top with arugula and finish with balsamic glaze.
Note: If you can’t find F.R.O.G. jam, you can stir equal amounts of raspberry preserves, ginger jam, orange marmalade and fig jam to make your own.
