Pear and Gorgonzola Flatbread

The secret ingredient to this is F.R.O.G. jam, which I get from the local Mennonites. It stands for fig, raspberry, orange and ginger. The combination is perfect for this flatbread because it’s not too sweet and has some chunks in it to add to the texture.

Prepping the Ingredients
Thinly sliced red onions add some piquant flavor to the flatbread. Use a sharp knife, like the 7-5/8″ Petite Chef to make controlled, thin slices.
When selecting pears for this dish, choose some that are less ripe and a little firm, so they’ll hold up better when you sauté them. Slice the pears using a 4″ Paring Knife. Using a smaller knife will allow you more control when making the slices, just make sure the blade is long enough to cut the length of the pear.
Sauté the onions until translucent and fragrant and then add in the pears to sauté to soften just slightly (about two minutes).
Making the Flatbread
I like to make my own flatbreads from scratch but they tend to be the size of a pancake. If you don’t want to make your own, you can use naan or Middle Eastern lavash.
Before adding any toppings, place the flatbread in a 400 F oven for three to four minutes, just to warm up. Stir the F.R.O.G. jam, then use a Spatula Spreader to spread it onto the warm bread as the base.
Place the sautéed onions and pears on the jam and top with crumbled gorgonzola cheese.
Pop the flatbread back into the oven for 10 minutes, pull it out and top with arugula.
A drizzle of balsamic glaze then pulls all the flavors together. You can make your own by combining one cup of balsamic vinegar and a quarter cup of brown sugar and simmering it on the stove, stirring occasionally, until it reduces by half.
Versatility
This recipe is easily tailored to your taste. You can use different cheese or different fruits. You can make is seasonal, too. For example, if you have leftover cranberry sauce at Thanksgiving, you can use that as the base in place of the F.R.O.G. jam.
The onion in this recipe helps cut through the sweetness. If you don’t like red onions you can use scallions, which have a bit of a nutty flavor to them. Just be sure to sauté the scallions to even out the bite.
It’s worth noting that if you can’t find F.R.O.G. jam, you can make your own. Grab some fig jam from the Italian aisle of the grocery store, along with some orange marmalade, raspberry preserve and ginger jam. Combine equal amounts of each to make F.R.O.G. jam.

Ingredients
For the flatbread:
- 2 tablespoons olive oil
- 1 small red onion, thinly sliced
- 1 medium-sized pear, thinly sliced
- 2 naan flatbread
- 2/3 cup F.R.O.G. Jam (fig, raspberry, orange and ginger jam)
- 1/2 cup crumbled gorgonzola
- Arugula, for topping
- Balsamic glaze, optional for topping
For homemade balsamic glaze (or store bought):
- 1 cup balsamic vinegar
- 1/4 cup brown sugar
Directions
- Preheat oven to 400 F.
- Heat a medium sauté pan over medium heat and add oil to pan once hot. Add thinly sliced onions, stirring frequently until translucent and fragrant. Add thinly sliced pears to the skillet to soften just slightly – about 2 minutes.
- Place naan on parchment-lined baking sheet and put in oven for 3-4 minutes, just until warm. Stir the F.R.O.G. jam so it’s not clumpy. Spread F.R.O.G. jam on warm naan.
- Place onions and pear slices on flatbread. Add crumbled gorgonzola.
- For the balsamic glaze: Whisk together vinegar and sugar in a small saucepan. Heat over low heat and bring to a simmer and let cook until reduced by half. Stir occasionally.
- Bake flatbread at 400 F for 10 minutes. Top with arugula and finish with balsamic glaze.
Note: If you can’t find F.R.O.G. jam, you can stir equal amounts of raspberry preserves, ginger jam, orange marmalade and fig jam to make your own.
