Ingredients
- 2 tablespoons reduced-sodium soy sauce
- 4 teaspoons sesame oil
- 1 garlic clove, minced
- 1 tablespoon minced chives
- 4 cups shredded rotisserie chicken
- 2 packages (8 ounces each) cream cheese, softened to room temperature
- 8 ounces Greek full-fat yogurt
- 1 jar (10 ounces) sweet-and-sour sauce
- 1 cup chopped fresh baby spinach
- 1 cup chopped arugula
- 8 green onions, thinly sliced
- 1/2 cup chopped salted peanuts
- Sesame rice crackers
Directions
- In a large bowl, mix soy sauce, sesame oil, garlic and chives. Add the shredded chicken and toss. Cover the bowl with plastic wrap and refrigerate for at least an hour.
- In a medium bowl, mix the cream cheese and Greek yogurt.
- Spread the cream cheese and yogurt mixture onto a large serving plate. Spread the sweet-and-sour sauce over the cream cheese mixture. Layer the spinach and arugula next, followed by the marinated chicken.
- Sprinkle green onions and peanuts over the dish. Cover the dish with plastic wrap and refrigerate for at least 2 hours.
- Serve with crackers.
