Sesame Rotisserie Chicken Dip

Sometimes it’s fun to create something different to bring to gatherings, and this Thai-inspired Sesame Rotisserie Chicken Dip is a dish that will definitely leave an impression. What I love most about this recipe is the use of rotisserie chicken. It shreds perfectly, is full of protein and is a key element.

Prepare the Ingredients

First, mince one garlic clove using a 7-5/8″ Petite Chef. Mincing garlic is one of those knife skills that comes in handy. Check out our easy tutorial, to learn how to do it.

Prepare the Dip

In a large mixing bowl, use a large spoon like a Basting Spoon to mix together the soy sauce, sesame oil, minced garlic and chives. Add four cups of shredded rotisserie chicken and toss until all the chicken is coated. Cover the bowl in plastic wrap and refrigerate for at least one hour. It’s important to allow the rotisserie chicken to sit and marinate to absorb all of the different flavors. If it looks a little dry, you can add more soy sauce or sesame oil.

In a medium bowl, mix together the cream cheese and Greek yogurt.

Using a Spatula Spreader, spread the cream cheese and yogurt mixture onto a large serving plate. I recommend not totally smoothing it out. Leave a few divots where the sweet-and-sour sauce can sit.

After you spread the sauce over the cream cheese mixture, layer the spinach and arugula. If you don’t have arugula or don’t like it, you can use just baby spinach, or vice versa. Lastly layer on the marinated chicken. 

Sprinkle green onions and peanuts over the dish, cover with plastic wrap and refrigerate for at least two hours. Serve this Sesame Rotisserie Chicken Dip with your choice of crackers.

Ingredients

  • 2 tablespoons reduced-sodium soy sauce
  • 4 teaspoons sesame oil
  • 1 garlic clove, minced
  • 1 tablespoon minced chives
  • 4 cups shredded rotisserie chicken
  • 2 packages (8 ounces each) cream cheese, softened to room temperature
  • 8 ounces Greek full-fat yogurt
  • 1 jar (10 ounces) sweet-and-sour sauce
  • 1 cup chopped fresh baby spinach
  • 1 cup chopped arugula
  • 8 green onions, thinly sliced
  • 1/2 cup chopped salted peanuts
  • Sesame rice crackers

Directions

  1. In a large bowl, mix soy sauce, sesame oil, garlic and chives. Add the shredded chicken and toss. Cover the bowl with plastic wrap and refrigerate for at least an hour. 
  2. In a medium bowl, mix the cream cheese and Greek yogurt.
  3. Spread the cream cheese and yogurt mixture onto a large serving plate. Spread the sweet-and-sour sauce over the cream cheese mixture. Layer the spinach and arugula next, followed by the marinated chicken.
  4. Sprinkle green onions and peanuts over the dish. Cover the dish with plastic wrap and refrigerate for at least 2 hours.
  5. Serve with crackers.
