Smashed Potatoes

Ingredients

  • 2-3 pounds baby Yukon Gold potatoes
  • Coarse salt, to taste
  • 1/4 cup olive oil, divided
  • Cracked pepper, to taste

Directions

  1. Heat oven to 425°F.
  2. Place the potatoes in large pot, cover with water and season with salt. Bring the potatoes to a boil and cook until they feel tender with a fork, about 10 minutes.
  3. Remove the potatoes, drain and let cool for about 10 minutes. Drizzle 1/3 of the oil onto a baking sheet. Arrange the potatoes on the sheet about 1 to 2 inches apart. Lightly smash the potatoes with your potato masher to about 1/2-inch thickness. Brush on the remaining oil and season with salt and pepper. Place them in the oven until light brown and crisp, about 20 minutes.
