After some experimenting with different toppings and flavor combinations, we came up with our version of Baked Avocado Eggs With Toppings. The best part of this recipe is that what we have prepared below is really a guide. You can use whatever toppings you prefer. Have fun and come up with your own ingredient pairings. You can’t go wrong!
Making Avocado Eggs
The key to this recipe is finding good avocados and making sure to create enough space in the center of the avocado to crack an egg, and not have it overflow. To start, use a 4" Paring Knife to cut around the avocado.
Twist the avocado in half and carefully remove the seed. Using a spoon, scoop out approximately a tablespoon of the avocado from each half (to create space for the egg).
Place the avocados skin side down onto a baking sheet. If the avocados want to roll, you can also place them in a large muffin pan, which will ensure that they won’t roll. Crack an egg in the center of each avocado half and season with salt and pepper.
Now for the fun toppings. We left one avocado with just the salt and pepper, but for the others, we sprinkled one with goat cheese, another with chopped cherry tomatoes and the final with bacon.
While the baked avocado eggs are cooking, prepare the other topping ingredients.
Bake until the egg is cooked and then remove from the oven. Sprinkle some parsley over the bacon, basil over the cherry tomato and chives over the goat cheese and serve.

Baked Avocado Eggs With Toppings combines all the flavors you need for a filling breakfast that can be different every time. Everyone enjoyed their own personalized avocado egg and, in the end, we had no leftovers. Now that’s the perfect recipe.
Ingredients
- 2 avocados, halved, seed removed
- 4 eggs
- Kosher salt, to taste
- Fresh ground pepper, to taste
- 1/4 cup bacon, cooked and diced
- 2 cherry tomatoes, chopped
- 1 sprig fresh basil, chopped
- 2 tablespoons goat cheese, crumbled
- 1 sprig of Italian parsley, chopped
- 1 tablespoon fresh chives, chopped
Directions
- Heat oven to 425 F.
- Take each halved avocado and scoop out about a tablespoon of the avocado from the seed area to create a larger hole. Place the avocados into a baking dish, skin side down.
- Crack an egg into the center of each avocado half. Season each with salt and pepper.
- Leave one avocado with just salt and pepper, sprinkle bacon onto another half, sprinkle cherry tomato over another half and sprinkle goat cheese on the remaining half.
- Bake the avocados until the egg is cooked, between 15-20 minutes.
- Remove from the oven. Sprinkle parsley over the bacon avocado, basil over the cherry tomato avocado and chives over the goat cheese avocado.
- Serve and enjoy.
