Cayenne-Rubbed Chicken

Ingredients

  • 4 boneless, skinless chicken breasts (approximately 6 to 8 ounces each)
  • 1 avocado, preferably Hass, pitted and chunked
  • 2 tablespoons olive oil
  • 1 medium red onion, finely chopped
  • 2 tablespoons fresh lime juice
  • 1/4 teaspoon cayenne pepper
  • coarse salt and pepper (to taste)

Directions

  1. Combine salt, pepper, and cayenne pepper in a small bowl. Rub over chicken.
  2. In large skillet, heat oil over medium heat. Add chicken and cook on each side until browned on the outside, (about 8 to 10 minutes per side).
  3. Combine onion and lime juice in a medium bowl then set aside. Just before serving, fold avocado chunks into onion mixture. Season with salt and pepper. Serve chicken topped with salsa.
