Charcuterie (shahr-cute-uh-ree) is a French word that refers to salted, smoked and cured meats, or what I like to call all things that make for a great appetizer platter. Add in a variety of cheeses and other accompaniments and you've got yourself an ultimate party spread that has a little bit of everything.
When creating a charcuterie board choose different styles and textures of meats and include something acidic, like olives, to complement the flavors. Fruits like figs, pears and nuts also pair well with cured meats.
If you're inviting cheese to the party offer a variety, from mild and buttery to sharp and hard.
