For a Delicious Take on a Baked Potato try the Hasselback

This might be the best baked potato ever. A hasselback or fan potato delivers on fun and flavor and is easy to make.

Hassleback

When choosing a potato to bake, the Idaho Potato Commission recommends an Idaho Russet Burbank due to its high starch content and low moisture. For slicing we recommend a 7 5/8" Petite Chef Knife or 7" Santoku Knife, which are large enough to accommodate large potatoes and sharp enough to make smooth, even slices.

Ingredients

  • 1 Idaho Russet Burbank Potato
  • Olive oil
  • Salt and pepper for taste
  • Bacon and scallions (optional)

Directions

  1. Place chopsticks on both sides of a clean potato and make even slices to a consistent depth.
  2. Place cut potato in a bowl of cold water to rinse and fan slices.
  3. Drizzle the potato with olive oil.
  4. Season to taste with salt, pepper and other preferred seasoning.
  5. Bake at 375°For 40-50 minutes.
  6. 6. Garnish with toppings and serve. (We used bacon and scallions.)
