Easy, Elegant Torte

Seems there is never enough time during the holidays, but that's not reason not to entertain. This quick and easy dessert will leave you plenty of time to enjoy your friends and family this holiday season. Best of all, if you stock up now, you won't even need a special trip to the grocery store. Whether you invite some friends to end the evening with dessert in your home or need an easy dessert to top off dinner, this recipe (which really doesn't need a recipe) will save the day.

This no-fuss recipe starts with a loaf pound cake. Not need to bake one, just pick up on (or two or three!) in the freezer section of the grocery store and keep them in your freezer. The humble cake gets transformed into an elegant dessert with a couple of spreads, a splash of liquor, and may be a few pieces of fresh fruit and a dollop of whipped cream, if you are so inclined.

Ingredients

  • 1 loaf pound cake
  • 1/4 cup (approximately) liquor or flavored syrup such as Amaretto
  • 1/2 cup fruit jam or preserves such as seedless raspberry
  • 1/2 - 3/4 cup nut-flavored or plain chocolate spread such as Nutella
  • Fresh fruit for garnish (optional)
  • Whipped cream for garnish (optional)

Directions

  1. Slice cake into thirds lengthwise.
  2. Brush the bottom and middle layers with Amaretto or other liquor.
  3. Spread seedless raspberry jam on one layer and Nutella on the other.
  4. Reassemble the loaf and wrap tightly in plastic until ready to serve. (This can be made a day or two ahead.)
  5. To serve, slice the loaf with a bread knife and place on plate; garnish with fresh berries and sweetened whipped cream if desired.
