Easy Sloppy Joe Meatloaf

I came up with this recipe because of my love of sloppy Joes as a kid and, as an adult, my love of meatloaf and meatloaf sandwiches. Turns out these two classic dishes make a perfect pairing for this Easy Sloppy Joe Meatloaf.
To make this recipe a little more special, I make it in individual cocottes. Meatloaf is kind of a rustic meal, but when you make it in the cocottes, it elevates it a bit. This version is also somewhat leaner, since it uses ground turkey instead of ground beef.
The Prep Work
The prep work for this meatloaf is as simple as simple gets. Chop up a bell pepper, using a 7″ Santoku.
Then chop the onion, using the same knife or give the 7-5/8″ Petite Chef knife a try.
As far as knife prep work goes, that’s about it.
Making the Meatloaf
Sautéed onions and peppers are added to a bowl along with the sloppy Joe sauce, ground turkey, breadcrumbs, egg and seasonings. It’s all mixed together until combined and then added to individual cocottes. If you want to use a loaf pan that’s okay, but note that the cook time will be longer.
Make sure to reserve some of the sloppy Joe sauce to top the meatloaf after it’s cooked.
This is delicious served fresh from the oven, but also the next day in sandwiches. The cocottes make perfect sandwich rounds. Just pop the leftover meatloaf out and use a 7-3/4″ Petite Slicer to slice. If you have some sloppy Joe sauce left, slather it on the sandwiches.

Ingredients
- 3/4 cup chopped bell pepper
- 1/2 onion, chopped
- 1 tablespoon unsalted butter
- 1 tablespoon olive oil
- 1 (15-ounce) can sloppy Joe sauce, divided
- 1 pound ground turkey
- 1/2 cup seasoned breadcrumbs
- 1 egg
- Italian seasoning, to taste
- Salt and pepper, to taste
Directions
- Preheat the oven to 375 F.
- In a small frying pan, sauté the peppers and onions in the butter and olive oil.
- Reserve 1/3 of can of sloppy Joe mix for topping the meatloaf.
- Place all the ingredients into a large bowl and mix thoroughly.
- Spread mixture in prepared dish (mini cocottes sprayed with nonstick cooking spray or a loaf pan).
- Bake for 30-35 minutes (if using mini cocottes), 60 minutes (if using a loaf pan) or until internal temperature reaches 165 F.
- Top with remaining sloppy Joe sauce and bake for an additional 5 minutes.
