Eleanor's Pumpkin Walnut Bread

Ingredients
- 3 cups sugar
- 1 cup vegetable oil
- 4 eggs
- 1 16 oz. can pumpkin
- 3-1/2 cups all-purpose flour
- 1 teaspoon baking powder
- 2 teaspoons baking soda
- 2 teaspoons salt
- 1 teaspoon cinnamon
- 1 teaspoon nutmeg
- 1 teaspoon allspice
- 2/3 cup of water
- 1/2 cup chopped walnuts
Directions
- Preheat oven to 350°F . Put sugar, oil & eggs in bowl and beat 1 minute. Scrape bowl and beat 10 seconds more.
- Add pumpkin, flour, baking powder, soda, salt, cinnamon, nutmeg, and allspice. With your electric mixer on low speed, mix 30 seconds. Scrape bowl. Add water and walnuts. On low speed, mix about 20 seconds until combined.
- Pour batter into two greased & floured 9 x 5 x 3 inch loaf pans. Bake for 50 to 60 minutes. Remove from pans and cool on wire racks.
- There are many ways to serve this, but we found a simple spread of butter was all that was needed. We added a little cinnamon for more spice. To serve as a dessert, warm for a few seconds in the microwave and add a scoop of vanilla ice cream.
