Garlic Honey Pork Chops with Sweet Potato Hash

Ingredients

  • 2 sweet potatoes or yams, peeled and chopped (2 cups)
  • 2 medium-sized bone-in pork rib-chop
  • Black pepper
  • 8 peeled garlic, thinly sliced
  • 3 tablespoons olive oil
  • 2 green onions, sliced
  • 1/2 cup brussels sprouts, sliced
  • 1 apple, diced (1/2 cup)
  • 2 tablespoons honey
  • 2 tablespoons water

Directions

  1. In a microwave safe bowl, place sweet potatoes and cover with plastic wrap. Cook on high for 5-8 minutes or until tender.
  2. Season rib chops with pepper.
  3. In a large skillet, heat oil over medium heat. Add garlic and cook until edges begin to brown. Remove with a slotted spoon and set aside. Add pork chops to skillet and cook 3-5 minutes on each side or until it is done to your liking. Remove to a plate and cover to keep warm.
  4. Add sweet potatoes to the skillet. Cook, stirring occasionally, until they begin to get crisp and golden on the edges. Add green onion, brussels sprouts and cook 1 minute more. Add apple and cook an additional 1 minute. Divide potatoes among individual plates. Top with pork and garlic.
  5. In the skillet, add honey and water. Whisk to combine, scraping some of the cooked bits from the bottom of the pan. Heat just until it begins to boil. Pour over pork and serve.
