Granny's Famous Oven-Fried Chicken

Nobody likes a messy kitchen. Preparing fried chicken can be very messy but my Granny’s Famous Oven-Fried Chicken recipe is mess-free and easy to make. This recipe originates from my grandmother who used to co-own a restaurant with her sister called Country Kitchen.

If you know anything about fryers, you know how long they take to heat up, which is why my grandmother would leave hers on at the restaurant to avoid the long wait of it coming back up to temperature. As a way to accommodate orders after the fryer was turned off, she started making this recipe.

You still get the true fried chicken flavor without the mess, and it is a much cleaner process than a deep fryer.

Making the Oven-Fried Chicken

Remember, for this recipe, we are oven-frying our chicken. To start, you will want to preheat the oven to 425 F. Use a Table Knife to put margarine onto a cookie sheet with a rim and place the pan into the oven to melt.

While the pan is warming up, cut two-and-a-half to three-and-a-half pounds of whole chicken into pieces. I recommend using Cutco’s Boning Knife. Its sharp, flexible edge easily maneuvers around the bones to cut it.

Cutting chicken with Boning KnifeThen, mix some Bisquick™, paprika, salt and pepper together in a large bowl. Put your chicken in the in dry mixture and evenly coat all the pieces.

Coating chicken with dry mixtureOnce the chicken is coated, remove the pan with the margarine from the oven and place the chicken, skin side up, onto the pan in one layer. Sometimes you may need to add more margarine to the pan, depending on the size of the chicken.

Put the pan back in the oven and bake for 35 minutes. Turn the chicken over and bake an additional 15 minutes or until fully cooked. The safe internal temperature for cooked chicken is 165 F. Once fully cooked, you can remove it from the oven and serve.

Every time I make this recipe and taste it, it reminds me of the fond memories I have of enjoying a quick and easy meal at my grandma's. To me, family recipes are some of the best recipes and I am happy I am able to share this special and sentimental recipe with those I love. Enjoy!

Ingredients

  • 1 1/2 tablespoons margarine
  • 2/3 cup Bisquick™
  • 1 1/2 teaspoons paprika
  • 1 1/4 teaspoons salt
  • 1/4 teaspoon black pepper
  • 2 1/2 to 3 1/2 pounds whole chicken, cut into pieces (legs, thighs, breasts)

Directions

  1. Preheat oven to 425 F. 
  2. Put the margarine onto a cookie sheet with a rim and place the pan into the oven. 
  3. In a large bowl mix Bisquick, paprika, salt and pepper. 
  4. Put chicken in Bisquick mixture and coat all the pieces. 
  5. Take the pan out of the oven and place the battered chicken, skin up, onto the hot pan with the melted margarine in one layer. 
  6. Put pan of chicken back in the oven and bake for 35 minutes. Remove the pan from the oven and turn over the chicken. Place the pan back into the oven and bake for an additional 15 minutes or until chicken of fully cooked.
  7. Remove from oven and serve.
