Ingredients

  • 1 medium-sized turkey (12-14 pounds)
  • 1 carrot (chopped)
  • 1 celery stalk (chopped)
  • 1 medium onion (cut in quarters)
  • Sprigs of parsley (chopped)
  • 2 tablespoons freshly ground coffee
  • 1 tablespoon kosher salt
  • 1/2 tablespoon ground black pepper
  • oil

Directions

  1. Fill the cavity of a medium-sized turkey (12-14 pounds) with one carrot (chopped), one celery stalk (chopped), 1 medium onion (cut in quarters), and sprigs of parsley (chopped).
  2. Mix together 2 tablespoons of freshly ground coffee, 1 tablespoon of kosher salt and 1/2 tablespoon of ground black pepper, and rub onto turkey.
  3. Brush with oil and roast at 350 degrees for 2 to 3 hours. Remove and let the turkey rest for 20 minutes before carving.
