Chicken Apple Gouda Sausage, Roasted Peppers and Sweet Onion Skillet

This Chicken Apple Gouda Sausage, Roasted Peppers and Sweet Onion Skillet recipe originated when I was searching for a side to pair deliciously with eggs. Cheesy and colorful, this skillet also makes a nice alternative main for those who don’t love eggs. Able to be used in a variety of ways, my favorite thing about this recipe is that it can be made ahead of time, leading to a stress-free breakfast or brunch.

Preparing the Ingredients

This is the perfect make-ahead dish. A lot of the ingredients can be prepped up to three days before serving and can be stored in bags in your refrigerator. Once you are ready to make the meal, you just add the ingredients to your skillet.

Using a Trimmer, cut the apple Gouda chicken sausage links in half lengthwise and then on the bias.

Then cut two cups of mixed small red, yellow, and orange peppers halved on an angle using the 7-5/8" Petite Chef knife.

With the same knife, slice one small sweet onion into strips, measuring at about one cup.

Chop two tablespoons of fresh scallions, parsley or cilantro and additional sprigs for garnish. Then, using the Cheese Knife, cut three ounces of Gouda cheese into thin slices.

Making the Skillet

Preheat the oven to 425 F. Spray nonstick sauté or cast-iron pan with nonstick cooking spray and heat. Add one teaspoon of olive oil and swirl to coat. Add the cut sausage links to the pan and brown on one side, turning and browning until the sausage is completely browned. Transfer the browned sausage to a plate, leaving any pan juices in the skillet.

Toss the peppers and onions with the remaining olive oil and Creole seasoning. Add the pepper mixture into the skillet, arranging evenly across the bottom and place in the oven. Roast for about 12 to 15 minutes until softened and until the edges start to brown. 

Remove the skillet from the oven, add the browned sausage and chopped herbs or scallions and mix until well combined. Then, top all with thinly sliced Gouda cheese. Place under a broiler to melt and then garnish with fresh herb sprigs.

Ingredients

  • 12 ounces apple Gouda chicken sausage links
  • 3 teaspoons extra-virgin olive oil, divided
  • 2 cups mixed small red, yellow and orange peppers, halved and cut on angle
  • 1 small sweet onion, sliced in strips (about 1 cup)
  • 1 teaspoon P.S. Flavor!™ Creole Kitchen seasoning or Creole seasoning of choice
  • 2 tablespoons chopped fresh scallions, parsley or cilantro; additional sprigs for garnish
  • 3 ounces Gouda cheese, thinly sliced

Directions

  1. Preheat the oven to 425 F. 
  2. Cut sausage links in half lengthwise and then bias-cut horizontally. Spray nonstick sauté or cast-iron pan with nonstick cooking spray and heat. Add 1 teaspoon of olive oil and swirl to coat. Add the sausage and brown on one side, turn and brown on the other side. Transfer sausage to plate, leaving any pan juices in skillet.
  3. Toss the peppers and onions with remaining 2 teaspoons olive oil and Creole seasoning. Add to skillet, arranging evenly across bottom, and place in oven. Roast 12-15 minutes until softened and starting to brown on edges. Remove from oven, add the fresh chopped scallions or herbs and the browned sausage, mixing to combine. Then, top all with thin slices of Gouda cheese. Place under broiler to melt.
  4. Garnish with fresh herb sprigs.
