Who doesn’t love baked oats? They’re cozy, satisfying and easy to customize with what’s in season or in your pantry. With easy variations of this dish blowing up on social media, I wanted to create my own variant that is nutritiously delicious, especially for breakfast. These Pear and Raspberry Chai Baked Oats have become one of my favorite go-tos to start the morning or as a snack through the day or bedtime. Packed with goodness and flavor, and just sweet enough to feel a little indulgent.
This version brings together juicy pears, tart raspberries and warm vanilla with a hint of maple. The real magic, though, comes from our P.S. Flavor!™ Mai Chai spice blend. It gives the dish a gentle warmth and complexity that makes every bite sing with flavor.
Prepare the Baked Oats
This dish is quick to put together with minimal prep. Turn your oven on to 350 F, allowing it to preheat while you prepare and mix the ingredients.
Next, dice the pears using a 4" Gourmet Paring Knife.
Then, in a small bowl, combine the oats, baking powder, salt and Mai Chai.
In a separate large bowl, use a Mix-Stir to whisk together the wet ingredients including eggs, milk, maple syrup, olive oil and vanilla.
Once thoroughly mixed, add in the oat mixture and stir well to combine. Fold in the raspberries and pears.
Bake Time
Spray a 9-by-13-inch glass baking dish with nonstick spray. Transfer the mixture to the dish and place in the preheated oven for about 40 minutes. If you’re using a deeper square pan, keep in mind it may take longer to bake. Possibly up to double the time of a standard 9-by-13-inch dish. You’ll know it’s ready when the center is mostly set with a slight jiggle, similar to a baked cheesecake. It will continue to firm up as it cools.
I used fresh raspberries and ripe pears in this recipe. The raspberries add a bright tanginess that balances the sweetness of the fruit and syrup, while the pears soften beautifully as they bake, giving a melt-in-your-mouth texture. The oats bake up tender and rich, almost custard-like thanks to the eggs and milk. The vanilla and Mai Chai infuse the whole dish with comforting aromas that fill the kitchen while it bakes in the oven. Serve hot or cold, both ways are delicious.
I like using the Spatula Spreader to cut and serve the oats.
Customize and Enjoy
This baked oat dish is delicious as-is, but I love serving it with a dollop of Greek yogurt or a touch of whipped topping and a few extra berries. You can also make it your own by swapping in other fruits. Think blueberries, apples, peaches, or whatever’s looking fresh at the farmer’s market.
I like to source maple syrup locally, but you can also purchase maple syrup directly from your supermarket. Just make sure that it’s pure maple syrup rather than an imitation variety. Pure maple syrup adds a lovely depth to the oats and pairs beautifully with the chai spice.
These Pear and Raspberry Chai Baked Oats also work well for brunch guests or busy weekday mornings. If you make a large batch and have leftovers, it will reheat wonderfully. These are also packed with protein and nutrients, thanks to the oats, milk and eggs.

Ingredients
- 2 cups old fashioned rolled oats or protein oats
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 1 tablespoon P.S. Flavor!™ Mai Chai or 2 teaspoons cinnamon
- 2 eggs
- 3 cups 1% or 2% milk
- 1/4 cup pure maple syrup or honey
- 1/4 cup extra-virgin olive oil
- 2 teaspoons pure vanilla extract or 1 tablespoon vanilla bean paste
- 1 medium pear, diced
- 1 cup raspberries
Directions
- Preheat oven to 350 F. Spray a 13 x 9-inch glass baking dish with nonstick spray and set aside.
- In a small bowl combine oats, baking powder, salt and spice. Set aside.
- In a large bowl whisk together eggs, milk, maple syrup, olive oil and vanilla extract. Add oat mixture to the wet ingredients and mix to combine. Fold in fruit.
- Transfer mixture to the prepared baking dish and bake until set, about 40 minutes. Let cool about 5 minutes before serving. Delicious hot or cold.
