Sloppy Joe Stuffed Sweet Potatoes

I love a sweet and savory dish and these Sloppy Joe Stuffed Sweet Potatoes deliver those flavors perfectly. The roasted sweet potato adds the sweet while the tomato sauce and beef from the sloppy Joe mixture brings the savory.

These are a meal in themselves. They use vibrant, antioxidant-rich sweet potatoes as a vessel for eating a dish we all grew up with. Another great thing about them is that because these sloppy Joes don’t need a bread or roll, they are great for anyone who can’t eat those due to allergies or other intolerances.

Making the Sloppy Joe

To make the topping, first dice up a sweet onion and green pepper with a 7-5/8″ Petite Chef knife.

diced onion and pepper with P ChefFor a little twist, I included diced mushrooms in this recipe. It adds another vegetable to the mix and they hide well if there are any picky eaters in the house. Clean the mushrooms using a damp cloth or by quickly rinsing them under cool running water. Then, use a 4″ Paring Knife to dice them.

 Making the Potato

The first thing to do when making these is to get the sweet potatoes in the oven. They’ll bake in a hot 425 F oven for about 45 minutes or until soft. But, when they’re done, turn off the oven leave them in for 30 minutes to an hour.

While they’re baking, you can make the sloppy Joe mixture, which is a matter of sautéing the diced onion, pepper and mushrooms in some olive oil. Then adding the garlic and ground beef to cook until browned. Ketchup, Worcestershire sauce, Dijon mustard and apple cider vinegar are added to complete the mixture.

Use a sharp knife like a Cutco Trimmer to slice the baked sweet potatoes down the center.

Pull the potato apart a bit, stuff with the sloppy Joe mixture and then top with some sliced scallions.

Sweet potatoes are a great ingredient to top with a variety of flavors. Along with this version, I also like sweet potatoes topped with a taco mixture, pulled pork or pulled chicken. All of them have that sweet and savory combo.

For these Sloppy Joe Stuffed Sweet Potatoes you could also change it up a bit by using ground chicken or ground turkey if you wanted.

Sloppy Joe Stuffed Sweet Potatoes

Ingredients

  • 4 sweet potatoes
  • 2 tablespoons olive oil
  • 1 small sweet onion, diced
  • 1 green bell pepper, diced
  • 4 ounces baby bella mushrooms, diced
  • 2 garlic cloves, minced
  • 1 pound lean ground beef or turkey
  • 3/4 cup ketchup
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon Dijon mustard
  • 1 tablespoon apple cider vinegar
  • 2 scallions, sliced for garnish

Directions

  1. Preheat oven to 425 F.
  2. Prick each of the sweet potatoes 2-3 times with a fork, then place them directly on the oven rack in the middle of the oven. Place a baking sheet on the rack below the sweet potatoes to catch the drippings. Bake for 45 minutes or until soft. Turn the oven off and let the sweet potatoes sit in the oven for at least 30 minutes, but up to an hour after they are cooked. 
  3. In a skillet over medium heat, add olive oil and sauté onion, bell pepper and mushrooms for about 5 minutes. Add garlic and ground meat, breaking the meat into smaller pieces.
  4. After meat has browned, add ketchup, Worcestershire sauce, Dijon mustard and apple cider vinegar. Mix to combine completely and let cook for about 5 minutes.
  5. Remove potatoes from oven, cut each potato down the middle and pull apart just a little. Top with sloppy Joe mix and scallions.
  6. Serve and enjoy.
